#easy #crockpot Chicken dinner! #acornsquash and mashed potatoes with gravy

Tonight's dinner was a comfort meal and an easy meal.

I put an oven stuffer roaster chicken from Perdue in the crock pot at 9am. I seasoned it with thyme, black pepper, seasoned salt, basil and oregano.

To make the acorn squash: I sliced it in half, scooped out the seeds and pierced the insides with a knife. I put a tablespoon of butter in each half as well as an unpacked tbls of brown sugar and a dash of black pepper. I placed into a glass pie dish and put some water into the dish. I covered with plastic wrap and cooked for 15 mins.

I made mashed potatoes and gravy, as well as some corn. I try to keep it simple and hope you try this veggie out. You can also bake it in the same manner and cover with tinfoil for a larger group. Enjoy!

1-2 cups shredded chicken or one breast (shred)
2-3 tbls Miracle Whip or Mayo (more as desired)
1 tbls brown sugar
pepper to taste

I like sweeter things so I use the Miracle Whip. Use your favorite Mayo if preferred.

Stir well and let sit for at least 2 hours so the sugar can dissolve.


**Mix in ideas include small diced celery and dried cranberries.

Serve ideas: cooked fillo dough puffs for a party, Pita, hot dog rolls for kids, wrap with lettuce or just a bulkie.

Makes 3 or 4 small wraps.

This is a simple meal for leftovers. I made a big roast turkey (could sub chicken). I made stuffing - see recipe - with mashed and carrots.

This is my leftover re-heat meal. The only thing I had to do was add a few ingredients to the stuffing and put into muffin tin and bake.
Need:
Chicken broth a few tablespoons (this will depend on how much stuffing you have)
Shredded/chopped turkey or chicken (1/2 breast cooked turkey or 1 breast of chicken)
Leftover stuffing (see my recipe)
A muffin tin
Gravy - optional
Cooking spray
Any sides you want ;)

My stuffing recipe
A box stuffing mix (I use the low-sodium chicken kind)
1 apple peeled and chopped
1/4 c of raisins
1 frozen sausage link
(optional) Banquet precooked, cut into small half moons or even quarters.
Follow the box instructions and when you add the stuffing add all the other ingredients.

Preheat oven to 350 degrees.

In small bowl mix
all ingredients lightly. You want to make basically 1 cup balls with the stuffing, this will fall apart a little but the moisture from the liquid should help to keep it mostly together. **DO NOT add too  much chicken broth at once**.

Place them into pre-greased muffin tins. I made 6 with the leftover stuffing - 1 per child and 1-2 per adult. I prefer mashed potatoes as you can see. ;)

Enjoy! Two meals from the first and really the added cost is the chicken both and cooking in the oven. ;) My other favorite leftover for turkey is open faced turkey sandwiches. I love gravy!

Chicken Stuffing Casserole w/summer squash
I had to use up some random peas from the garden, an open bag of stuffing, and shredded cheese from taco night. So this is what I came up with.

There are always things I keep on hand like: stuffing, cream soups, beans, etc. I have a well stocked pantry as a matter of fact and shop rarely since it isn’t close by. Also, I am a super saver. On average I save 40-50% at the grocery store. So not only is this a meal that stretches leftovers, but your budget as well. This meal I would say could feed 5-6 people. Total estimated cost a little over 2 bucks.

Preheat oven to 350 degrees

In a 2 Qt casserole dish make filling:
1 precooked chicken breast, diced or shredded into bite sized pieces
6 baby carrots, thinly sliced
Handful of fresh peas, shells
½ summer squash cubed
1 can cream of chicken
3 tbls chicken broth
¼ c cheddar cheese shredded
¼ tsp thyme
Pepper

Combine above and flatten.

Topping:
3 tbls melted margarine or butter
½- ¾ package stuffing (I used low sodium stovetop chicken)
Some chicken broth, just enough to make stuffing moist (stir/fluff with a fork)

Apply topping and spread to the edges.

Bake for 30 min approximately or until topping is browned and carrots are tender. The mixture should be bubbly.
