1/2 c margarine
1/2 box of quick cook stuffing (I use turkey)
2lbs of chicken, apx 3-4 breasts, cut into strips (4-5 pieces per breast)
1/3 c parmesan cheese
2 sprayed baking sheets
Preheat oven to 350 degrees.
Step 1: In a shallow bowl put margarine and press cloves into it. Microwave until just melted.
Step 2: Pour the parmesan cheese and half of stuffing mix into a baggie (I tend to try and get all the tiny crumbs from the bottom). Smash the baggie with mallet until approximately half of the stuffing is crushed, the key is to leave a lot of the stuffing whole. Put onto a plate or pie dish so that you can bread the chicken.
Step 3: Dip the chicken pieces into the margarine mixture and then press into the crumb mixture , coating all sides. Place onto a sprayed baking sheets. Repeat process until completed. With any leftover crumb mixture spread over chicken pieces, with leftover margarine mixture, spoon over each chicken finger.
Bake approximately 15-25 minutes, depending on the size of the pieces. Cut into or press on the chicken for firmness to determine doness.
